Mix veggies handi – Indian style mix veg

I had learnt this recipe from my beloved mother. Every time when I use to make it with this recipe it comes really good, gravey is creamy and less spicey.

This mix veggies recipe has the typical punjabi flavor and taste where vegetables are cooked in the gravey.

But you can saute the vegetables, fry them or steam them. 

Serve mix veggies handi with naan, tandoori rotis or phulkas along with onion salad.

Here’s the recipe!


1 cup cooking oil
1 medium chopped onion
1 tbsp garlic paste
2 medium size chopped tomatos
4 to 5 chopped green chilliz
¾ tbsp salt
½ tbsp red chilli powder
½ tsp turmeric powder
1 cup sliced carrots
2 medium size sliced potatos
1 cup peas
1 bunch of fresh chopped fenugreek (میتھی)
½ tbsp garam masala powder


In a cooking pot, heat oil, add onions and saute them. Add garlic paste and fry till comes golden edges. Then add tomatos and green chillis, add spices and bhoonify for minute. Put veggies and fry for 2 minutes and cover with lid for. Cook on low heat for about 5 minutes. They would cooked in their own juice carbs. After 5 minutes to cook, add fenugreek and mix well. Cover it again till completely cooked. Add garam masala, bhoonify on medium till oil leaves edges.
